Generally a video/vga over cat-5 works pretty well. Minicom has a nice system, the DS3000, which is a robust system made for digital signage applications. The system may be a bit more expensive, so it may not be cost effective to use it for lesser quantities of monitors or 1-1 apps. One thing to watch out for, if you are not using the DS3000 is that if you wish to transmit sound to your digital signage network, you generally need "powered" receivers.
Our company has been doing digital signage since about 2001 and provides full solutions with web, LAN, or stand alone systems. Cabling generally varies between each level that is chosen. Users with more than one display must be aware of which content will be seen on which monitor. Different content on different monitors may require additional players, and different cabling systems. That's why it is best to work with companies that will educate consumers on the solution, and aide in the application layout.
